Dietary fat has undergone a remarkable rehabilitation in nutrition science. For decades, fat was vilified as the primary cause of heart disease and obesity — advice that led to a national experiment in low-fat eating that coincided with rising rates of both. Modern research has clarified that fat type matters more than total fat quantity, and that adequate fat intake is essential for health.

Eating a salad with fat-free dressing dramatically reduces the absorption of carotenoids and other protective phytonutrients.
